París Market Lab

En esta ocasión, nos animamos a participar en este concurso promovido por Archmedium. Nuestro equipo estaba formado por Lola Blasco Góngora, Carmen Vázquez Moreno y por mí.

Desde ArchMedium proponemos la creación de un nuevo concepto de restaurante al que hemos apodado como “Market Lab” (laboratorio de mercado). El París Market Lab es un complejo donde la cocina adquiere una nueva dimensión y se relaciona con el público de un modo menos convencional. El Market Lab es a la vez restaurante y escuela, y está llamado a estar entre los mejores del mundo en ambas disciplinas. Gracias a la experimentación continua de las cocinas y a la rotación constante de chefs el Market Lab se convertirá en una experiencia completamente distinta cada noche que todo el mundo podrá disfrutar a precios mucho más asequibles que los restaurantes de lujo.

From ArchMedium propose the creation of a new restaurant concept which we have dubbed «Market Lab» (laboratory market). The Paris Market Lab is a complex where the kitchen takes on a new dimension and is related to the public in a less conventional way. The Market Lab is both a restaurant and school, and is destined to be among the best in the world in both disciplines. Through continued experimentation kitchens and chefs constantly rotating the Market Lab will become a completely different experience every night everyone will enjoy much more affordable than fancy restaurants prices.

Solar

El solar está estratégicamente ubicado a escasos metros del mercado de Saint-Germain, obligando a que el nuevo diseño se integre y dialogue con los tejidos urbanos históricos de la ciudad. Actualmente existe un edificio aislado típicamente parisino que hace unos meses se incendió parcialmente, y no tiene mayor interés patrimonial.
No hay ninguna imposición de la organización en cuanto a la intervención en el actual solar. Cada equipo decidirá si proyecta un edificio de nueva planta o bien prefiere conservar el actual, ya sea parcialmente a modo de restauración o en su totalidad.

Site

The site is strategically located a few meters from the Saint-Germain market, forcing the new design integrates and dialogue with the historic urban fabric of the city. Currently there is a typically Parisian building isolated a few months ago was partially burned, and has not much patrimonial interest.
There is no imposition of the organization in terms of intervention in the current plot. Each team will decide if a building well-planned new plant or prefer to keep the current, either partially restore mode or in full.

Programa

El Paris Market Lab tendrá que albergar diferentes usos que vendrán determinados por las necesidades de las dos actividades que en él se desarrollarán, la enseñanza y la restauración. Como los horarios de la función escuela y de la función restaurante serán complementarios, se propone que el edificio tenga una cierta flexibilidad que le permita albergar ambas actividades en espacios compartidos; escuela de cocina durante el día y restaurante durante la noche. Las cocinas por ejemplo servirán como espacios didácticos durante el día y como cocinas del restaurante durante la noche.
El edificio propuesto tendrá unos 3310m2 repartidos en no más de 6 plantas. La organización establece un límite de altura en el cual el proyecto no podrá superar en ningún caso una altura máxima de Planta Baja +5. Se acepta también la inclusión de una planta subterránea sin que esto suponga un incremento en el cómputo global de metros.

Program

The Paris Market Lab will have to accommodate different uses that will be determined by the needs of the two activities it will be developed, education and restoration. Since school schedules function and restaurant will be complementary function is proposed that the building has a certain flexibility that allows both host activities shared spaces; cooking school during the day and restaurant at night. Kitchens for example serve as instructional spaces during the day and as restaurant kitchens overnight.
The proposed building will have about 3310m2 divided into no more than 6 plants. The organization sets a height limit in which the project can not in any case exceed a maximum height of ground floor +5. Including a basement is also accepted without this implying an increase in the overall calculation of meters.
